I need a good simple steak marinade
I've been just doing olive oil, garlic and lemon pepper recently but I'm tired of it now.

hers a good rub - used by a top steak place in LA
good for 2 to 4 steaks depending how much you like your steaks flavored let it marinate for 15 to 30 min 4 TBS of Olive OiL 2 TBS each of: garlic, sage, basil, rosemary, 1 tsp of oregano salt and pepper

check it out.... (trust me)
there arent many people out there who know steak better than myself. and one of the best & most simple marinades ive ever used (and use 95% of the time) is MUSTARD & TERRIYAKI SAUCE. mix the 2 equally, dont forget a little salt and pepper (and garlic if you wish). |

more:
olive oil, thyme, onion and lots of black pepper argentinian chimichurri (one of many recips): dehidrated red pepper, parsley, garlic, salt, 1 part of vinegar, 1 part of warm water, 3 parts of corn or regular oil. Leave it resting for 1 day good for pork: curry, soy sauce and a bit of sugar

I've been grilling skirt steaks over a charcoal grill; marinated in lime juice then rubbed with Mexican fajita seasoning.
If you have any Mexican groceries in your area is the best place to find skirt steaks. The taste is incredible! |

Smear some club house montreal steak seasoning over the steaks.
Put them in a container Dump some good tasting wine in the container with the steaks - keep pouring until the steaks are 1/4 covered (just a bit) Let sit for no more then 20-25 min Cook away Poor leftover sauce on steak when you flip the first time Mmmmm |

I like:
1 cup red wine 1/4 cup olive oil black peppercorns (about 6) 1 bay leaf 3 sprigs of thyme 1 tablespoon of brown sugar and I do one similar to Morgan's Mustard and Teriyaki - give that ago, I bet its a winner!

perfect for kabobs ... (i substitue shallots for scallions)
1/2 cup olive oil 1/3 cup soy sauce 4 scallions, washed and cut in 1/2 2 large cloves garlic 1/4 cup lime juice 1/2 teaspoon red pepper flakes 1/2 teaspoon ground cumin 3 tablespoons dark brown sugar or Mexican brown sugar 2 pounds inside skirt steak, cut into 3 equal pieces Heat charcoal, preferably natural chunk, until grey ash appears. In a blender, put in oil, soy sauce, scallions, garlic, lime juice, red pepper, cumin, and sugar and puree. In a large heavy duty, zip top bag, put pieces of skirt steak and pour in marinade. Seal bag, removing as much air as possible. Allow steak to marinate for 1 hour in refrigerator. |
