the best way to cook chicken

the best way to cook chicken is to first boil it. it will stay juicy all the way through, then pull it out and pop it on the grill with some hickory bbq sauce to crisp up the outside while the inside stays juicy.

Though boiling can also have a reverse effect and make it dry and also fuck the skin up, hell even a slight simmer can.
Now I have steamed chickens, and ducks. Whole or in parts, then let dry in the fridge and then grilled on the BBQ. The steam cooks the poultry and gets rid of a lot of the fat. The refrigeration dries the outside skin out real well so that it really crisps when cooked.

If you want it nice and juicy, take a whole chicken, clean it out and stick it in a crockpot for the day. I do this all the time and it's fall off the bone tender. You can use the chicken to eat out of hand, in chicken pot pie, chicken salad, pasta, etc. It roast in its own fat and is simply wonderful and easy

I just put it on a high flame to just char the outside, then I turn the grill way down and let it just cook until it's done. Comes out crispy on the outside and moist on the inside.

Stuff it with an onion and herbs. Rub it with herb butter. Wrap it tightly in plastic wrap and bake it for 1.5 hours at 225F. It will be the tenderest chicken you heave ever eaten but if you like to eat the chicken skin it isn't going to be for you.

That works pretty good with ribs.

I like my chicken best when I cook it on my Weber Grill using an indirect heat. I'll coat the skin with oil and season to my liking. The skin comes out nice and crispy. The trick is don't overcook it so it will stay juicy. Not much margin for error here. 5 mins too long is all it takes to go from juicy to dry.

I made a great duck a la'range variation last night.

4.5 lb duck stuffed with cornbread stuffing made with orange/pineapple juice, juice of a lime and orange/lime zest with a orange/pineapple/lime/lemon/zest/honey glaze. popped it in the oven at 375 for 1 hr 40 mins +/r (i like it "rare").

i don;t even boil hotdogs. Boiling is not a good idea unless you are dealing with certain awefuls(tongue etc)

I beat the crap out of chicken fillets, coat them in flour then cook them in a little oil, adding wine and BBQ sauce at the end. Mmm, mmm, mmmm.
