Condiment of choice?

I am a sucker for a good condiment but I have to say that overall I am a mustard girl. My fridge is full of different types of mustard that range from the delicate French types to the English types that give you a nose bleed. What is your condiment of choice?

once you've experienced the pure perfection that is thai sweet chili sauce you will toss all other condiments in the dumpster. i consider this a condiment, i may be wrong, but this long ago replaced ketchup in my diet (outside burgers and hotdogs)...

I always have a bottle of Thai sweet chili sauce in the fridge. I don't use it on everything but I do use it fairly often.

Ketchup is fine but my flatmate dumps it on everything and it has sort of put me off of it. It is a bitch to cook a meal where you have worked hard to balance flavours, etc and before somebody even tastes it they cover it in ketchup.

Oh damn...

Umm Mustard is high up there. I have numerous types as well and a bunch of whole seed too.

I also am a fan of chili sauce but that pales in comparison to my selection of vinegars which ranks up there with mustard to me but may not really be considered a normal condiment.

I also keep some home made mayo on hand whenever possible, tastes so much better than the store bought caca. Though I will admit I do have some best foods (Hellman's) in the fridge.

Lastly although a spice technically, really fond of celery salt on many items.

Yeah, I am a vinegar person too. I like mayo but I can't really have it as I am watching fat grams so when I do have it I have to have the near fat free variety with isn't that nice. So, mustards and vinegars allow me to have a lot of flavour without the fat. I just picked up a garlic grain mustard at a food fair last week is really nice. It packs enough punch that you only need a tiny bit on a whole sandwich.

You should try your hand at making some of your own mustards. It is real easy and they last damn near forever.

Franks kicks ass on many things, it just did not make my top list.
Old bay to me is almost always a spice for me.

One spice/additive that has gotten a bad rap that I still use every so often as well is MSG. Most often hidden under the brand Accent.

There are numerous places that tell you how.
Personally I avoid the ones that call for powdered mustard and just grind my own and sieve if needed. I almost always use whole spices whenever possible. PS, do not use the same grinder you grind coffee in if you grind your own.
