Onionsoup is actually pretty easy to make. Some wine, onions, herbs, water, stuff to thicken it, dunno the english name and you could be done in 15 mins. Make a lot, leave some in the fridge and the next day it will taste even better.

Chop up 10 onions
saute 1/3 of them in butter until soft
Add the next 1/3 and keep sauteeing until they are soft
add the next 1/3 and cook until they are soft
add 2 sprigs of fresh thyme and rosemary and cook a few more minutes.
now you should have some nicely caramelized onions as well as some more opaque onions.
add 2 pints of beef stock and 1 pint of chicken stock
bring to a simmer and let it cook for a good 60 mins.
taste and add salt and pepper as needed.

you can deglaze the pan with red wine after the onions are sauteed but quite often i find the wine makes it too acidic for my tastes. why go to the trouble of using good sweet onions only to kill that sweetness with wine.

Cause the alcohol does bring out some other flavors. I am not for the heavy acidic tastes either. There is a balance there somewhere I know there is.

Damn this thread makes me crave my french dip sandwiches.

I make an onion soup that also has a roast braised in it until it falls apart.
Serve beef on soft rolls with mayo, fresh onion, and avocado slices. Dip them in the soup.
Hmm maybe tomorrows dinner idea is fixed.

Take 8 portabello mushrooms, remove the stems (save them) and wipe them clean. In a bowl mix 2/3 of a cup of regualr olive oil, 1/3 cup balsamic vinegar and a pinch of salt and pepper.

Mix the vinegar/oil mixture then dip the mushroom caps in it then place them on a baking sheet. Bake at 350F until tender (15-20mins depending on mushroom size).

Stir for a few minutes until it begins to thicken then add 2 sprigs of thyme and rosemary. Simmer for 20 mins.

Remove the thyme and rosemary and put the soup into a blender and puree. Return the soup to the pan and bring back up to a simmer. Take the roast portabello caps and dice them and add them to the soup. Let it cook about 10 more mins and then taste and add salt and pepper as desired.

Great mushroom soup!
