Onionsoup is actually pretty easy to make. Some wine, onions, herbs, water, stuff to thicken it, dunno the english name and you could be done in 15 mins. Make a lot, leave some in the fridge and the next day it will taste even better.

english name is same as french I think. Roux, though bread works best. Oh and cheese, yes toasted bread and cheese on top.. mmmmm

Chop up 10 onions
saute 1/3 of them in butter until soft
Add the next 1/3 and keep sauteeing until they are soft
add the next 1/3 and cook until they are soft
add 2 sprigs of fresh thyme and rosemary and cook a few more minutes.
now you should have some nicely caramelized onions as well as some more opaque onions.
add 2 pints of beef stock and 1 pint of chicken stock
bring to a simmer and let it cook for a good 60 mins.
taste and add salt and pepper as needed.

DatingGold 10-17-2006 02:37 PM

Sounds good but missing the wine, what gives?

you can deglaze the pan with red wine after the onions are sauteed but quite often i find the wine makes it too acidic for my tastes. why go to the trouble of using good sweet onions only to kill that sweetness with wine.

Cause the alcohol does bring out some other flavors. I am not for the heavy acidic tastes either. There is a balance there somewhere I know there is.

Dirty F 10-17-2006 02:47 PM

Onionsoup needs wine. End of discussion.

After Shock Media 10-17-2006 02:51 PM

Damn this thread makes me crave my french dip sandwiches.

I make an onion soup that also has a roast braised in it until it falls apart.
Serve beef on soft rolls with mayo, fresh onion, and avocado slices. Dip them in the soup.
Hmm maybe tomorrows dinner idea is fixed.

ArkansasDave 10-17-2006 03:50 PM

This is an excellent way to abuse a crockpot. I love my crockpot. You throw shit into it, add water, and it's soup by the end of the day.

Webby 10-17-2006 06:46 PM

Oh shit - we got the cream of culinary artists on GFY now?? :winkwink:

But sure like onion soup - the version that is made from onions and not some shit out of a packet :pimp

Take 8 portabello mushrooms, remove the stems (save them) and wipe them clean. In a bowl mix 2/3 of a cup of regualr olive oil, 1/3 cup balsamic vinegar and a pinch of salt and pepper.

Mix the vinegar/oil mixture then dip the mushroom caps in it then place them on a baking sheet. Bake at 350F until tender (15-20mins depending on mushroom size).

In a skillet place 2 tbs butter and melt then add one chopped onion and the stems from the portabello mushrooms. Cook until tender. Add 2 more tbs of butter, melt it then add 4 tbs of flour. Stir until the flour is incorporated and keep stirring a few minutes until the flour is cooked. Add 1 clove of garlic (minced) and cook briefly then add 2 pints of chicken stock. Stir for a few minutes until it begins to thicken then add 2 sprigs of thyme and rosemary. Simmer for 20 mins.

Remove the thyme and rosemary and put the soup into a blender and puree. Return the soup to the pan and bring back up to a simmer. Take the roast portabello caps and dice them and add them to the soup. Let it cook about 10 more mins and then taste and add salt and pepper as desired.

Great mushroom soup! :thumbsup
