I got me a powerful pinin' fer some red eye beans and gravy. With homemade biscuits!

I was just talking with a bus driver today about food in Los Angeles. We agreed NY outstrips LA any day of the week. Philadelphia and Chicago are close twins to NY. Boston ain't that far behind either.

But then we got to talking about southern cuisine. Foods made out of things cartoon companies make characters out of.

Gotta admit those southern dishes like cornbread stuffing, crawdads and corn, grits, fried chicken, bar b qued raccoon and possum belly and chitlins sure can make ya' wanna marry a woman quick who can cook em'.

I can cook just about anything. Southern food is my specialty but I can also cook the heck out of Italian, Mexican, Chinese, Cajun... just about anything. Pretty soon I want to learn some Russian and Japanese dishes. I LOVE to cook!

I got the dopest bachelor/for your kids recipe ever.

1 pack of Oscar Meyer? hotdogs cut into 1/2" sections
1 pack of frozen OreIda? tater tots
1 can of Bunker Hill? hotdog chili
1 package shredded chedder cheeze
1/4 C. Ketchup
Salt and Pepper to taste

Mix all that shit in a baking dish and bake on 375 for like 20 minutes. Good for one free heart attack of your choosing.

You can actually hear yourself getting fatter with every bite.

Nick, here is another heart attack inducer that my whole family loves.

Tater Tot Casserole

1 bag frozen tater tots
2 pounds ground beef
1 small onion, peeled and diced
2 cans condensed cream of chicken soup
2 cups shredded sharp cheddar cheese

Brown the ground beef with the onions in a frying pan until the meat is completely cooked and the onions are translucent. Stir the soup and cheese over low heat until the cheese is completely melted, stirring constantly to avoid sticking. Place about 2/3 of the tater tots in a 13"x9" casserole dish. Mix the beef mixture and soup mixture together and pour over the tater tots. Then put the remainder of the tater tots on top of it all, pressing them down until they are about hald buried, but leave a little sticking out on top to form a nice brown crust. Bake at 350 for 30 minutes and dig in. YUM!

I got that recipe from one of my favorite southern restaurants. It's a cute little mom and pop place owned by some semi-distant relative of mine. A great great uncle or fourth cousin or something, I think. I miss their food. Haven't eaten there in years.

My favorite southern food restaurant EVER is in north Georgia. It's called Dillard House and it's in Dillard, Georgia. Their food is AMAZING and the mountain view is just beautiful. They have a cookbook out that I recommend to anyone who wants to learn to cook real southern food. The Dillard House Cookbook.

Some more cookbooks that I have that are great if you love southern food:

The Foxfire Book of Appalachian Cookery (THE BEST!)

Natalie Dupree's Southern Memories (among other things, it has the best recipe for Brunswick Stew I've ever found)

Very true. Cilantro is great unless it's overdone. I wouldn't think of making salsa without it, but it's really easy to add too much.

How do you guys eat that shit. My old roommate was this dude from Australia. He loved it. Said his mom used to put it on toast. I tried it cause he made me. It was ... wierd.

We eat it from when we are kids so we grow up with it.

I like it but you have to apply it carefully. Too much and you're in trouble.

Nick are you Greek? If so you should know the Greeks can cook like no tomorrow!

Man I miss them home cooked Greek dishes! We used to have lamb roasts now and then and the boys would whip up a baste that turned the meat into like something out of this world.

We would spend two or three days preparing a roast.

No actually I am Irish I stole this name from National Lampoons Vegas Vacation. I agree though, greek food is great. I like the Mousakka I think it's called. Whatever it was called it has like meat on top and potatos on the bottom. Good shit.

I'm about to whip up my specialty:

Cappuccino Blueberry Pancakes with hot Italian smoked sausage.

One batch of these and you can't move for an hour or two. Don't get fat either, makes you lose fat cause the fiber in the blueberries absorbs all the fat in the food and cleans out your system.

I know these are great cause my Dad had a handyman at one of his houses who was a chef for the Royal Marines. He came into the kitchen one day and I served him up a dish of these pancakes and he was slain. Told me they were the best pancakes he ever tasted and begged for the recipe.

The one recipe I wish I had gotten was from another chef my Dad had hired. He used to cook southern food. I mean waaaayyyy back in the hills southern food.

One night my parents were out and I visited their house to watch it. Opened up the fridge and there was a huge plate of bar b que... Best freakin' bar b que I ever had and I was tearing it up and watching Star Trek. I was in-the-zone!

Then the parents come home, Dad pops his head in the kitchen and says:

" Son! Glad you got hold of that bar b qued raccoon! I couldn't eat another bite! "

I almost keeled over. If I had known what it was I wouldn't have eaten it. I thought it was rabbit or something.

Yet that recipe ROCKED ASS. To this day I can't find bar b que like it.

I have to thank my parents for bringing me up to be the kind of girl that most guys truly enjoy being around. I'm not snobby, self-centered, money-hungry or selfish. I'm extremely faithful. I love to cook. I'm not sexually inhibited and I am bi-sexual. I love science fiction (especially Star Trek). I love computers. I love video games and RPG games like AD&D. I love action movies (including martial arts movies and superhero movies) and I don't like very many chick flicks.

I guess my one fatal flaw when it comes to being "the perfect chick" would be sports. I HATE sports. Oh well, you can't have everything! Hehe. Luckily, I met a guy that loves sci-fi and hates sports as much as I do.
