Any CHEFS around here? Best dish?
Everyone has their favorite they prepare.
I learned the value of chefs because I used to live near the Culinary Institute of America in NY. You wouldn't believe the time and energy and mindpower these people put into preparing food! Some of these people are top biologists, or chemists BEFORE they go into the culinary arts. They test soil, do microscope samples, fly around the world for ingredients etc. It's like food prepared by Mr. Spock. Yet one taste and you know WHY they go through it all. There are several top chefs here in L.A. that work in small bistros but their food ROCKS. It ain't NY but it'll do. Home cooking is still a favorite and rare find. Some people will punch you out for messing with their mom or pop while they're whipping up a family dish. |

Save the cows for steaks and filets. Microwave your kids hamster. They taste the same as a bacon hot pocket and its self contained. I would advise poking a couple holes in the cranium to prevent explosion.

Fresh high quality ingredients, the right combo of spices and creating incredible tasting sauces are the secrets to a great meal.

Freshest in season ingrediants you can get. Locally produced always best. If it isnt in season or the best it can be skip it. Fresh or whole spices ground yourself at all times. Meat from a butcher, fish from a monger that is known for freshness. If it comes wrapped in plastic on a tray forget it. Homemade base stocks. |

maigret de canard in sweet sauce.
I believe maigret de canard is roasted duck breast. Absolute all time favorite of mine if anyone cares.
