Freshest in season ingrediants you can get. Locally produced always best. If it isnt in season or the best it can be skip it.
Fresh or whole spices ground yourself at all times.
Meat from a butcher, fish from a monger that is known for freshness. If it comes wrapped in plastic on a tray forget it.
Homemade base stocks.
