I feel like you could actually do both. Smoke it for about an hour or two (or longer depending) on a low temp and then fry it to finish it. Need to smoke it long enough to permeate the smoke inside and then a quick fry to crisp the outside
Just like with ribs etc, smoke them for a while and then finish on high heat to caramelize it

I mean the whole bird is too big to merely fry it, some roasting should be involved as well..
