Still can't understand how you guys (especially the Americans) can eat turkey. It smells... nasty. There is only one member in my family who loves it - our cat The non-vegetarian part of the family prefers roasted, grilled or braised chicken (frayed food is too unhealthy even for my digestion of an ostrich... )

I feel like you could actually do both. Smoke it for about an hour or two (or longer depending) on a low temp and then fry it to finish it. Need to smoke it long enough to permeate the smoke inside and then a quick fry to crisp the outside
Just like with ribs etc, smoke them for a while and then finish on high heat to caramelize it

Awesome you got to do it in the house. I remember our outdoor fryer makings a pretty decent amount of smoke/fry smell. Was this the case for the indoor cooker? Great looking bird!
