Still can't understand how you guys (especially the Americans) can eat turkey. It smells... nasty. There is only one member in my family who loves it - our cat The non-vegetarian part of the family prefers roasted, grilled or braised chicken (frayed food is too unhealthy even for my digestion of an ostrich... )

I feel like you could actually do both. Smoke it for about an hour or two (or longer depending) on a low temp and then fry it to finish it. Need to smoke it long enough to permeate the smoke inside and then a quick fry to crisp the outside
Just like with ribs etc, smoke them for a while and then finish on high heat to caramelize it

Pork is now very lean. And cooking in oil does not mean death. The oil stays on the outside, on the skin. It does not get inside the item.

I honestly did not see, hear or imagine somebody drowning the whole bird in the oil. So that was where my surprise came from. Different cultures maybe.

Actually I am quite fond of cooking and even read some blogs, recipes quite often.
Like I said it must be different cultures, honestly never heard or imagined somebody would cook a bird this way...
