Cooking advice for porgies(scup)?
I have a pound or 3 of some porgy fillets that I caught deep sea fishing on saturday and I'm trying to decide how to prepare them.
Right now i'm leaning towards a simple lemon/butter/garlic prep, low and slow on a cast iron skillet. Anyone have experience cooking these fish? ![]() link hotten

I would sprinkle some chicken seasoning, lemon and butter and bake it in a hot oven or under the broiler.

pan fry the fish in light olive oil (extra virgin will burn)
in a diff pan on medium heat melt butter, add the juice of a lemon, capers and salt and pepper to taste. put that over the fish. voila |
