Here is a favorite recipe of mine... I usually put in A LOT OF shallots (either 4) or 1 Onion in lieu of the wussy amount of scallions. Then chunk out the meat for kabobs. And mix with your favorite veggies ... onions, green peppers, red peppers, mushrooms, etc.


1/2 cup olive oil
1/3 cup soy sauce
4 scallions, washed and cut in 1/2
2 large cloves garlic
1/4 cup lime juice
1/2 teaspoon red pepper flakes
1/2 teaspoon ground cumin
3 tablespoons dark brown sugar or Mexican brown sugar
2 pounds inside skirt steak, cut into 3 equal pieces


In a blender, put in oil, soy sauce, scallions, garlic, lime juice, red pepper, cumin, and sugar and puree. In a large heavy duty, zip top bag, put pieces of skirt steak and pour in marinade. Seal bag, removing as much air as possible. Allow steak to marinate for 1 hour in refrigerator.

Fill a bag or baking dish with italian dressing, add 5 or 6 splashes of soy sauce, then chop up one whole red onion and one whole lemon into big slices and add to the mix, top with garlic powder(or fresh garlic) and black pepper, let sit for at least one hour (overnight preferrable). Poor most of the the leftover sauce and onions into a pot and let cook almost at boil on the stove for the amount of time it takes to cook your steak, serve on the side. Deeelicious.

If I have to marinade.

I take a gallon size zip lock bag.
Get myself about 8-10 cloves of garlic and give them a good wack to bust em up, toss them in. Does not matter if paper is still attached.
Roughly chop up 1 medium onion, toss in bag. Again skin does not matter.
Toss in about 2 tablespoons of corse ground black pepper.
Grab two rosemary stalks, pull backwards to remove all leaves, rub between hands as your tossing the leaves into the bag.
Toss in a teaspoon of accent or any MSG stuff (optional of course for you freaks who think this is worse than the bird flu)
Toss in 2 tablespoons spicy dijon mustard or any grain mustard.
Pour in 1/3 cup canola oil or vegetable oil.
Pour in 1/3 cup rice vinegar, red wine vinegar, or citrus juice.
Pour in 1/4 cup worhoeveryouspellitshire sauce.

Then seal and shake like hell.
Add meat and put in fridge for 30 minutes, and then remove and leave on counter for 30 min to get to room temp.

Grill.

Got a jar of pickles in your fridge?

Try dumping some barbecue sauce in a bowl, then add a good splash of the pickle juice, and if you like the spicey stuff then add a few good shakes of tobasco, mix it up good, then pour it over your raw steak and let it soak in it for a day or two. (the longer the better) Then barbecue it.

Gad damn good steak let me tell you.
