BBQ ribs day - give me your best recipe

So far, I've been cooking the ribs the lazy way - boil them with black pepper corns, a bit of salt, one or two bay leaves, and once they are cooked, I marinade them (usually honey and mustard) and then put them in the oven, basting them a few times while they are there.

Give me your best recipe, I'm willing to try something new, spicy is not a problem, sweet and sour not a problem either.

Hmm, I'm not BBQ them, I will have to cook them in my oven, misleading title right there

rub them
put them on a smoker at 225 for 3 hours
take them off the smoker get some foil out ... put the ribs in the foil with some juice and brown sugar and butter
wrap them
put them back in the smoker for 2ish hours
unwrap them
let it smoke for another hour

I didn't do ribs, but I did pork neck yesterday which was awesome (1kg or so lump of meat).

I rubbed some brown sugar, chili, smoked paprika and other "bbq:ish" spices on the meat and held it in the fridge overnight.

Then I placed in the oven in an ovenproof dish, under tinfoil. Just 110c oven until the meat temp was 90c. It became like pulled pork, so awesome. It was in the oven for like 10 hours.





..oh and do pour the fat/juices over the pulled meat.

spice them up, today I used off the shelf bbq rub, cinnamon honey and volcano dust.

inject them with AJ, center rack in the over (on foil) at 225 for 2 hours... pull out wrap tightly with foil with bbq sauce.

I used a off the shelf bbq sauce w/ no corn syrup, handful dried cherries, shirca and a bit of brown sugar to sweeten the sauce up. microwaved for 4 min.

back in for 2 hours... unwrap, take the oven up to 325, back in 20-30 min maybe... put a bark on the ribs...

all this is more or less no precise..

Almost ready, soooo tender; mixed mustard, 2-3 spoons balsamic vinegar, sugar, 1/2 glass of beer, and a touch of soya sauce, poured the mixture over the ribs, back in the oven for another 10 minutes and they should be done. Used a dry rub I bought from the store and marinated the ribs for four hours before putting them in the oven, ideally I should have left them for 12 hours, but there's always a next time
