Everybody always wants to eat way before it's ready. It's actually better the next day after it's been cooled down then re-heated. :)

I moved to CO from CA and my family, and now every Christmas I feel the need to call my grandma so she can tell me about the crab chipino she's making for xmas dinner, as she's done since before I was born. The stuff you're making just reminds me of that; the smells, the setting....ah, the childhood memories.

The pot I made today is twice as much as I usually make but since we have a lot of company here in Florida for spring break I needed more.

I cheat on the Roux and use gumbo mix shown here http://www.neworleanshowcase.com/la11001.html

1.5 Gallons Of Spring Water
3 Packs Of Gumbo Mix
1 Large Can Chicken Broth

Chopped and sautayed until clear. (This is known as the "trinity")
6 Sweet Onions
3 Bell Peppers
10 Celery Stalks

1 - 2 Minced Garlics
4 - Chopped Chalets (Green Onions)

8 - 10 lbs peeled fresh shrimp small
3 lbs Blue Crab lump meat

3 Teaspoons salt or to taste
6 - 10 Shakes of Tobasco sauce
1 Tablespoon of File' (Sassafras)

Mix it all together and cook on low stirring often for 6 hours.

Serve over white rice with French bread on the side.

Cost $75 - $100

You can cut it in fractions to meet your quantity needs.

"Bon Appetit!!!!!!!" :winkwink:

XOXOXO

No optional file powder (sassafras seasoning) in recipe or as a side?

Noticed that as well but before I could edit. I am so used to eating it sprinkled on after it is poured over the rice, I skimmed past it.

Oh on the shrimp when you say small, you do not mean the 75-100 count do you? Hopefully your talking 10-15 or 21-25 right?

ITG-Obi 03-26-2005 05:32 PM

seafood is yummy... whatever it is.. as long as its seafood.. it's my fave

The shrimps were 20 - 25 count and they only had 5.34 lbs so he gave me the next size up at the same price to make up the rest that I needed. Girlpower!!!!! :winkwink:

Cool thanks for clarification. Would hate to see someone trying to make that recipe and buy 10 or hell even 5 pounds of 100 count shrimp.
