Yes!!! Zatarains liquid crab boil is included in the 15 herbs and spices that I didn't list. In that 5 gallon pot I used 5 approx. tablespoons

Thanks ADG........I worked hard on that Gumbo.

As for the beer, I don't actually drink beer except with seafood. I guess I should have been geographically correct and put some Dixie there for the pic. It is very nasty but loved by people in New Orleans as a local tradition. :)

You just don't know... gumbo is one of the most comfort foods :thumbsup

I have a "cheat" version where I roast flour in a baking sheet (shake every couple minutes) until it is dark instead of frying up a rue. With barley and okra thickening up the end dish you don't miss the fat :)

My pet peeve with seafood gumbo is people who put anything other than seafood in it. My worst experience with "seafood gumbo" was one where the only thing other than liquid in it was a single D shaped half slice of sausage. Too many people (and restaurants) put in chicken, turkey, sausage, etc. and a handful of salad shrimp and call it seafood gumbo :disgust

If it don't swim it ain't seafood :glugglug

Well said MG.........although I do have a very old recipe for awesome chicken and sausage Gumbo pased down from some of the poorer Cajuns around Crowley. It is either one or the other type of Gumbo, but never mix.

My worst experience with other Gumbo was when I ate some with big chunks of Catfish in it. Even though it is seafood in a way it ruined the whole taste as a cheap filler. :Oh crap

Catfish in gumbo should be against the law :1orglaugh Maybe you should give that crazy cook a nice etouffee recipe :thumbsup

If I were ever going to put fish in it I might consider one that holds a texture and accepts flavor, not adds different (like shark nibblets or something) but fish shouldn't be there and I've never done it myself. I'd be more likely to call any concoction with fish in it "stew" :upsidedow

Damn.....I knew I forgot something in my recipe posted. I had 2 lbs. of okra in my Gumbo also. :thumbsup I boil it in a big pot first for about 30 minutes then rinse with cold water before adding it to the pot. It takes the slimey texture out of the okra and preserves the original Gumbo liquid. I hate slimey Gumbo!!!!!! :Oh crap

Wow....let me know how it was. Most places that claim to be Cajun around the U.S and world aren't really very good at all unless the chef or owner is actually from New Orleans or somewhere close. I've had some really bad experiences..... :disgust
