Anyone know a good recipe for Sweet Potatos and Marshmallows...HELP!
I was invited to a Thanksgiving dinner with my girlfriend's family and they asked me if I would cook a dish for the dinner. I volunteered to cook the Sweet Potato and Marshmallow dish, but I really have no clue how to make it.

MARSHMALLOW SWEET POTATO CASSEROLE 8 med. sweet potatoes 2 tbsp. butter 1/2 c. hot milk 1/2 tsp. salt 1/2 tsp. cinnamon or nutmeg 1/4 tsp. paprika 1 c. chopped walnuts 1/2 lb. marshmallows Cook sweet potatoes until tender. Remove skins and mash. When smooth, beat in butter, milk, salt, spices. Beat well. Fold in walnuts and turn into buttered baking dish. Top with marshmallows and bake at 350 degrees until marshmallows puff and become golden brown. |

Serves 6-8
2 1/4 lb (1 kg) sweet potatoes (canned or precooked) 2 cups (500 ml) milk 3 Tbsp (40 g) brown sugar 3 Tbsp (50 g) melted butter 1/2 tsp (2.5 ml) salt dash (0.5 ml) pepper dash (0.5 ml) cinnamon 1/4 cup (40 g) raisins marshmallows 1 Mash sweet potatoes by putting through a sieve or beating in an electric beater or using a potato masher or food mill. 2 Add milk gradually (if you add it too fast it splashes and is hard to mix in). 3 Mix in remaining ingredients. 4 Put in buttered casserole. 5 Heat through (bake in slow oven (250F or (120C for 20-30 minutes, or in microwave). 6 Cover top with marshmallows. 7 Return to oven until marshmallows are slightly melted and a bit brown (if the oven is too hot, the marshmallows will disappear!) This step cannot be done in the microwave.

The one I use. Can not remember where I got it.
CANDIED SWEET POTATOES OR YAMS 6 large bright orange sweet potatoes 1 lb. dark brown sugar 1 stick of butter 2 cups of miniature marshmallows 1/4 cup of white sugar 2 teaspoons of salt Wash and peel potatoes. Chunk potatoes into 2 inch disks. Put potatoes in a pan and cover with water. Add 2 teaspoons of salt and 1/4 cup of white sugar to the potatoes and water. Cover. Boil until potatoes are fork tender (approximately 30 minutes). Drain potatoes. Put potatoes in a baking dish and sprinkle with brown sugar. Dot potatoes with butter. Bake for 20 minutes in 350 degree oven. Sprinkle with marshmallows. Return to oven and bake until marshmallows are brown.

I just toss in some candied yams from a can into a casserole dish, smush them up, add some cinnamon and nutmeg, a little orange juice, put the marshmallows on top and stick it in the oven (at the lowest temp another oven is cooking something in) and wait for the tops to brown
Sometimes I'll add some chopped pecans in there too. |

All of these recipes are perfect...thanks you guys. This could save me from looking like a total idiot on Thanksgiving. Now, I just have to make sure I dont drink too much, lol.

Ohhh... I just made this for a Thanksgiving dinner this past weekend with friends. It went quickly:
Sweet Potatoes Ingredients: 6 medium sized sweet potatoes 10.5 oz bag of minature marshmallows 6 oz bag of walnuts Sauce: 1/2 cup packed brown sugar 1/2 cup dark corn syrup 1/4 cut butter or margarine Extra Sauce: (to put on mid way through baking) 1/2 cup packed brown sugar 1/2 cup dark corn syrup 1/4 cut butter or margarine Directions: Preheat oven to 350 degrees. Take the sweet potatoes and slice into 1/4 inch slices or maybe a little larger. Place in a boiling pot of salted water. Cover and cook 20 minutes or until fork-tender. Make sure you slice before boiling - it will be MUCH easier to peel the skin off. Drain water and run cold water over the slices. Remove peels and place the slices in a 9x13 baking dish. Take walnuts and chop up in a food processor to smaller pieces. Set aside. In a medium pot over medium heat, combine first group of sauce ingredients. Heat mixture to boiling, reduce heat to low and simmer, stirring occassionally for 5 minutes. Pour mixture over sweet potatoes. Add walnuts and marshmallows. Use as many marshmallows as you want - I used about 1/3 of the bag. Set timer at 12 minutes. While the sweet potatoes are in the oven, start on 2nd group of extra sauce - same way. At the end of 12 minutes, pour mixture over and set timer for 8 more minutes. Makes about 6-8 servings. General rule of thumb is 1 potato for every person, but you'll end up with some extras. (They are so good reheated too!). Enjoy! |

I am not fond of sweets, though it is a requirement and it is not all that bad.
Just remember marshmallows and or nuts are always optional.
