Ohhh... I just made this for a Thanksgiving dinner this past weekend with friends. It went quickly:

Sweet Potatoes
Ingredients:
6 medium sized sweet potatoes
10.5 oz bag of minature marshmallows
6 oz bag of walnuts

Sauce:
1/2 cup packed brown sugar
1/2 cup dark corn syrup
1/4 cut butter or margarine

Extra Sauce: (to put on mid way through baking)
1/2 cup packed brown sugar
1/2 cup dark corn syrup
1/4 cut butter or margarine

Directions:
Preheat oven to 350 degrees. Take the sweet potatoes and slice into 1/4 inch slices or maybe a little larger. Place in a boiling pot of salted water. Cover and cook 20 minutes or until fork-tender. Make sure you slice before boiling - it will be MUCH easier to peel the skin off. Drain water and run cold water over the slices. Remove peels and place the slices in a 9x13 baking dish.

Take walnuts and chop up in a food processor to smaller pieces. Set aside.

In a medium pot over medium heat, combine first group of sauce ingredients. Heat mixture to boiling, reduce heat to low and simmer, stirring occassionally for 5 minutes. Pour mixture over sweet potatoes. Add walnuts and marshmallows. Use as many marshmallows as you want - I used about 1/3 of the bag. Set timer at 12 minutes.

While the sweet potatoes are in the oven, start on 2nd group of extra sauce - same way. At the end of 12 minutes, pour mixture over and set timer for 8 more minutes.

Makes about 6-8 servings. General rule of thumb is 1 potato for every person, but you'll end up with some extras. (They are so good reheated too!).
