I cook mine. But this year da mommy is cooking. We are heading up to PA tonight and will be home Saturday morning. We'll be here for Christmas though. We rotate it. Last year we went up there for Christmas.

Sage butter under the skin - Apple, Herb & Toasted almond dressing inside - Bacon slices draped over the bird

It's actually an unbelievable turkey.

Apple, Herb & Toasted Almond Dressing
-------------------------------------
1 loaf multigrain bread (cut into 1 inch cubes)
4 tablespoons unsalted butter (1/2 stick)
2 cups medium-diced yellow onion (2 large)
2 cups medium-diced celery (3 large stalks)
2 Granny Smith apples, unpeeled, cored and large diced
2 tablespoons chopped flat-leaf parsley
1 1/2 teaspoons minced fresh rosemary leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup chicken stock
1/2 cup sliced toasted almonds

Saute all the veggies & apples in the butter until they are soft, season with salt & pepper. Add bread cubes, almonds & chicken stock. Cover and let sit for about 20-30 minutes. Stuff your bird and go. This dressing is off the motha fuckin chain btw. It sounds like a kind of strange mix of taste, but it is fabulous.

If you do fry your turkey btw, that dressing is great as a stand-alone. Just hook it up in a 12x9 buttered baking dish and bake it on 350' for about 30 minutes or so.

we tend to switch around on the baking and frying

I think I'm definitely going to go with fried turkey for Christmas this year. Especially when it's only 3 minutes a pound compared to 18-20 minutes a pound with baking. Plus I heard they're pretty damn good fried...

Brine for a day then roast.

Always a 12 pound or less bird, never larger. If we need more turkey it just means getting more than one bird. We NEVER EVER buy those scary ass fake turkeys with breasts bigger than Pam Anderson. We always pick up heirloom turkeys from our local butcher who gets them from a farm not far from here or on occasion when he has them available wild turkeys. I can say if you have had a heirloom or wild turkey, those frozen scary things at the store taste nothing like it at all.

when roasting I brine it and when frying I inject it

I have one of those great big industrial injectors. Usually make a mixture or chicken stock, butter, garlic, and whatever other seasonings I have around

I smoke one and fry another. When i fry i actually place the turkey in before the oil has reached its optimal temp. This helps the skin from getting over fried.

I dig a hole in the ground, lower turkey in it wrapped in tinfoil. Come back 5 1/2 to 6 hrs later. Pretty fun plus it frees up the oven for wife.
