Ok folks, I am in charge of the family Christmas dinner on Wednesday. I know it's early, that's not the point. The point is that two of the people attending are vegetarian and another person is allergic to onions. I would love to make a kickass stuffing (obviously not cooked in the turkey) but am searching for recipe recommendations. Any ideas?

See if you can use nuts and dried fruits, those two work really great with rice. The trick is to soak the dried fruits in cranberry juice before coking and use some chutney to sweeten it all.

Elli, use vegetable broth and cream of mushroom soup as substitutes. Also use poultry seasoning. It will taste the same.

I was just about to make a thread about cooking, i need some ideas on how to cook fish in foil...sorry to inturupt ur thread Elli, but theres no point in making another one about the same thing.

VEGETABLE ALMOND MEDLEY
3 lb. (4-5 c.) mixed vegetables 1 c. chopped onion 2 med. cloves minced garlic 1 c. chopped almonds 2 c. water 5 tbsp. butter 3 tbsp. flour 1 tsp. prepared horseradish Dash of Tabasco 1/2 tsp. dry mustard 1 tbsp. soy sauce Salt and pepper to taste TOPPING: 1/2 c. toasted almonds 1/2 c. fine bread crumbs Saute onions and garlic in 2 tablespoons butter. Saute lightly. When onions are translucent, add vegetables. Add the longer cooking vegetables (cabbage, broccoli, cauliflower, carrots, celery) first, soft (zucchini, peppers, mushrooms) later. Saute until cooked to your liking. Toast 1 cup almonds. Place in blender with water. Puree until smooth. This is "almond milk." Melt 3 tablespoons butter and whisk 3 tablespoons flour. Add almond milk and seasoning, stirring constantly, over low heat. Simmer for 10 minutes or until thickened. Stir occasionally during simmering. Combine sauteed vegetables with almond sauce. Add salt and pepper to taste. Pour into a large buttered casserole. Sprinkle with combined bread crumbs and chopped, toasted almonds. Mediterannean Fish Parcels 1 1/3 cups sliced zucchini 1 1/3 cups sliced seeded tomatoes 1 cup sliced sweet red peppers 4 tbsp pitted chopped kalamata olives (optional) 4 tbsp sliced green onion 4 sole or haddock fillets (I used halibut and it worked fine) 1/2 sundried tomato and oregano salad dressing (Classico has a new one that's perfect!) Lay out 4 pieces of foil about 15" in length. In the centre of each, please 1/3 cup zucchini and tomatoes, 1/4 cup red pepper, 1 tbsp olives, 1 tbsp onion. Cut fillets in half through thickest part. Place fish over veggies, thin end of one fillet overlapping thick end of the other. Spoon 2 tbsp dressing over fish and veggie pile. Cross foil starting with longer ends, making a double fold in the centre. Roll in the sides and press to seal. Bake at 375F for 20-25 mins, until fish is opaque and flakes with a fork. Makes 4 servings.

When I'm searching for something new and inventive instead of making the same old things all the time I go to All Recipes ....you can search by the name of the dish, the type of food (main course, appetizer, etc), or by ingredients. The last option is great when you're looking for something different to make with the same old chicken breasts that you have all the time. I love the fact that people can give feedback and rate the recipes after they've tried them too - that way you can see what sucks before you waste your time making it yourself.
Good luck! It sounds like you have a challenge on your hands. If I varied from the traditional family stuffing recipe there'd be a riot at my house! |

Elli I really suggest you make multiple stuffings. The one size fits all approach rarely works in these situations.
When we do dinner things and have a vegetarian or someone with allergies come, we ussually special make those peoples dinner and then everyone else gets the regular menu. It is a lot easier than trying to fit everyone into the restrictions of the two "special" people.

a good way to cook fish in foil...
chop up some bell peppers, onions, carrots, potatoes. Blanch all of those first so they are soft when they come out of the oven. make a bed out of the veggies on some foil, then put some tilapia or even salmon on top. put your seasoning/butter on top then put a couple slices of lemon and some thyme on there. cover with another peice of foil |

This is the best stuffing ever, I guarantee everyone who eats it will love it:
Williams and Sonoma Focaccia Stuffing Mix with Herbs de Provence. Link Here Use the recipe on the box with chestnuts (you can pick them up at Williams and Sonoma as well) and sausage (can be left out for vegitarians, or substitute turkey sausage). This is far and away the best stuffing I have ever had/made.

With all due respect.
People who choose to be Vegetarian shouldn't impose their choice on other people. I do quite a bit of entertaining and I appreciate a meal made for me, but I'd never have the nerve to tell a host what i do and don't like and what I will and won't eat. I would say that you should cook a traditional Ham or Turkey or give them the following ![]() |
