btw, I found a wicked "fish in foil" recipe in the previous M&M Meats flyer. Ahh here it is.

Mediterannean Fish Parcels

1 1/3 cups sliced zucchini
1 1/3 cups sliced seeded tomatoes
1 cup sliced sweet red peppers
4 tbsp pitted chopped kalamata olives (optional)
4 tbsp sliced green onion
4 sole or haddock fillets (I used halibut and it worked fine)
1/2 sundried tomato and oregano salad dressing (Classico has a new one that's perfect!)

Lay out 4 pieces of foil about 15" in length. In the centre of each, please 1/3 cup zucchini and tomatoes, 1/4 cup red pepper, 1 tbsp olives, 1 tbsp onion.

Cut fillets in half through thickest part. Place fish over veggies, thin end of one fillet overlapping thick end of the other. Spoon 2 tbsp dressing over fish and veggie pile.

Cross foil starting with longer ends, making a double fold in the centre. Roll in the sides and press to seal. Bake at 375F for 20-25 mins, until fish is opaque and flakes with a fork.

Makes 4 servings.
