Anyone Own a Sushi Bar?

we are thinking of opening one here, have to drive an hour and a half to get to a decent one and EVERY time we ever bring it up in a conversation, people always say they wish there was one here locally. It is a pretty rural area, but we would obviously start off with just a small bar to see how it worked out.

anyone have any experience in a sushi resturant that would care to lend any advice, etc.?

We have a bunch in LA, but I always end up driving far to the place that has the best sushi.

Wow, i'd love to do similar.

Here's a tip, import tuna from Japan, then do a big PR about how you are the only place in america, who doesn't treat raw tuna with CO2 so it keeps it's red color even when not fresh. (well, you wouldn't be the only place, but still...)

Yeah, my favorite place locally is 40 minutes away in Woodland Hills.

There are a few places closer to my house, and I do go to them occasionally -but they're not as good!

I have a place 5 min from me that is super expensive, I live in Philly but its super expensive and you can tell the difference of course. I also have a place 15 min from me that is a all you can eat sushi bar. Its nice for the fact that the sushi doesnt sit out they prepair it as you want it. For 11 bucks and a few tip you cant go wrong. Its truly amazing you can get many different rolls, plus food from the kitchen such as tempura - chicken or shrimp, plenty of shit. Its quality for the Buck

Lot's of good sushi bars here in the Bay Area...plus, my wife is Japanese and makes the most excellent sushi - good fresh fish is important, but what sets the best sushi apart is the rice...it's all about the rice (otherwise all you got is sashimi).

Shout out for the soy sauce and wasabi too!!!

As far as I understand it, and I don't know for sure, Sushi Chef's trained in Japan get paid quite a bit of money.
