Be My Hamburgler (My First Post)

Hey hey hey everyone! Here's a little something on the lighter side.

I'm making hamburgers tonight. Now, usually Peter just buys the Safeway pre-made frozen patties. But I feel like doing it the old-fashioned way, with raw beef and making up my own patties (slappin' some meat around, know what I'm sayin?)

So.... if anyone out there has a KICKASS hamburger recipie, feel free to post it here! I will try out the best and let you know how it goes! Now, keep in mind, I'm willing to try anything, but Peter is rather persnickity. Nothing too too outrageous for him!

Harvey's has the worst burgers

And I don;t think muffins will go over well on the bbq for some reason.

What am I doing asking a bunch of guys for a recipie, anyway? It's not like they know how to cook more than Kraft Dinner.

But wait, I thought men were supposed to be Lords of the Grill? Come on Lords! Tell ya what.. the poster of the winning recipie gets a free 3 day pass to my site.

I can grill pretty good (better than Peter, if you ask me). So no worries there. And I bought fresh buns from the bakery about an hour ago.

The meat at Harvey's here tastes like non-meaty cardboard. More breadcrumbs and thickener than meat. Ugh. The only one I know of is in Home Depot, though. Maybe that's the problem...

Add 1 packet of dry Lipton onion soup mix to 1 lb. of hamburger meat.

Top them with some sharp cheddar cheese and Hidden Valley Ranch dip.

Crack some pepper, add some onion soup mix, brush patties with worchestshire (or however you spell it) sauce. Grill and DO NOT press them while grilling or they will get dry.

Add a little kosher salt when you take them off and serve with whatever you want.

Or make same style mix, into very thin patties, Put a tablespoon of blue cheese or other easy melting chesse in the center. Lay another patty over the top, press edges together to seal and grill like above.

Don't know about the ranch dip, but my friend made burgers with lipton onion mix and it was divine!

After you pick up a box of it (its cheap) and maybe some sea salt or other types of salt, include table salt in this test as well.

Get yourself a ripe tomato and cut it into even slices (I would personally remove the seedy pulp so just the flesh remains). Then sprinkle a little of each salt on the tomato a different slice. Try each, you will then get the taste differences of various salts.

The onion soup, pepper, and worcester sauce recipes won't go wrong. Another good one, though it doesn't go with those, is to chop up some pepperoni and mix it in with the beef.

Yeah, I tried that myself, good stuff. Did not wanna go off on wierd ingrediants that most prolly would not have in the house.

Here is an odd one to get an even more beefy flavor. Mix in a jar of beef baby food per pound of hamburger. No I am not kidding either.

Another common one is to use half ground beef and half ground pork. I would personally use a food processor to ground my own beef up without adding any fat, then let the pork handle the fat needed.

take 1/4 lb butter and mix with chopped bacon, garlic, onion and cheese

mix butter con-cock-tion with the hamburger, egg and some pepper

grill without pressing and the hamburgers will be flavorful and juicy

it is better if you grind the ingredients together butt this requires special equipment ie a meat grinder then you would use top round or steak instead of hamburger

dont forget to grill the onions, tomatoes and the buns it makes all the difference in the world

Keep it simple

Fat gives both flavour and mositure. Get at least 20% fat content meat. Mix in some kosher salt.

Make a pattie that is flat on both sides and cook either on a George Forman or frying pan until 155 F

Ok, Peter bugged out for dinner at the last minute on a business call, but I perservere...

I decided on the butter/bacon/cheese mixture recipie by ibs. However, so far they are rather wet and I just flipped them, but they're kinda crumbling apart. I think maybe more meat next time.

I have gourmet pepper relish and some good ol' miracle whip for the bun.

And I AM trying the grilled tomatoes and buns thing.

Hey, it's summer. The whole point is to not turn on the stove inside the house! It's 85F inside my house right now and thta's with all the windows and doors open and the fans going. ugh!

And of course my computer room is on the top floor.. roasting....

Sebastien never did cook for us while he was here. How did he get out of that one? Hrmmm...

Actually, you didn't mention any quantities at all other than the butter, so I kinda winged it. It turned out great, though! They firmed up a bit on the second side, so they weren't too runny.

Will onion lipton and worcestire sauce in the beef still taste good if you are frying in a pan in the kitchen instead of barbecuing? And anyone ever try eating hamburger meat with regular white sliced bread instead of hamburger buns?

And what's better, buying already made patties and frying, or making your own patties with ground beef?

I also never heard of mixing lipton powder and onions IN the patties? I don't think I've ever had a hamburger with any onions or stuff INSIDE the beef patty. Are you sure?? But then again, the only burgers I eat are McDonalds and In N Out

Phogirl, I've tried the white bread thing. It's awful. Not the same at all. Might as well make an open-faced roast beef dip with it.

The homemade patties are far superior, which is why I asked for recipies today.

Yes the onion soup stuff and the worchestshire will still taste good in a smoking hot frying pan or under a broiler. If your pan frying you will want to mix the worchestshire into the beef and not brush it on or it will carmalize to fast and get burnt.

If you make your patties fairly thick, to insure they cook all the way through, cover the patty or pan with a lid. It helps keep the heat in and makes sure the insides are not pink.

Medium rare and hamburgers do not mix, unless you grind or food process the meat into hamburger yourself.

If you use standard white bread, toast it some first or you will end up with a funny paste that used to be bread.

K, thanks for the tips. i need to go and buy ground beef and stuff this weekend and try the recipe. Sounds good
