'Germans'is not referring to an ethnic group, it means they are from Germany.

Jews refer to somone who is Jewish, a religion. Nothing to do with ethic groups.

'German Jews' is perfectly correct.

In that case the German language must be a social construct, and not something that organically came from a specific ethnic group.

It's only when it comes to White people that these things are even questioned. Nobody questions the Chinese-ness of the Chinese, or the Japanese-ness of the Japanese.

Judaism is still a religion. I could call myself Jewish as my maternal grandmother was Jewish. My mom decided not to practice the religion and so have I. You can choose your religion but you can't choose your ethnicity...
