Okay, it's recipe time!

Share a recent recipe favorite. I'm trying the following tonight with a fresh red snapper?

*ingredients
1 2-to 2 1/4-pound whole red snapper, cleaned
1 tablespoon minced garlic
1 tablespoon fresh lemon juice
3/4 teaspoon seafood seasoning
2 tablespoons (1/4 stick) chilled butter, cut into pieces
6 fresh thyme sprigs
6 thin lemon slices

*preparation
Place 24x18-inch piece of foil on heavy large baking sheet. Butter foil. Place fish in center of foil. Season cavity of fish with garlic, lemon juice and seafood seasoning. Dot cavity with butter. Arrange thyme sprigs inside cavity. Sprinkle outside of fish with salt and pepper. Top with lemon slices. Fold edges of foil over fish; seal. (Can be made 1 day ahead. Refrigerate.)

Preheat oven to 350°F. Bake fish until cooked through, about 45 minutes. Transfer fish to platter. Open foil.

Love snapper and been a while I had some. Will try your recipe over the weekend.

Since you are into fish give a try to this, very simple.

Sake Tuna

Have your tuna marinate in a ziploc with sake, lemon, ginger and spice of your choice. I've tried cinnamon or fine herbs and all where great.

Let the tuna marinate for a couple of hours and then simply have it seared real quick and serve.

If we are sticking with fish, here is my go to mahi mahi... Mahi Mahi with Mango Salsa and Coconut Rice

*Ingredients
2 tablespoons olive oil
1 1/2 teaspoons soy sauce
2 teaspoons lemon juice
1 clove garlic, crushed
2 teaspoons red pepper flakes
1 teaspoon fresh ground black pepper
1/2 teaspoon minced fresh ginger root
2 tablespoons chopped green onion (optional)
salt to taste
4 (4 ounce) mahi mahi fillets

2 cups uncooked jasmine rice
2 cups water
1 cube chicken bouillon
1 tablespoon butter (optional)
3/4 (14 ounce) can coconut milk
2 tablespoons white sugar

1 1/2 teaspoons butter
1 1/2 tablespoons white sugar
1 1/2 cups fresh mango, cubed

*Directions
Whisk together the olive oil, soy sauce, lemon juice, garlic, red pepper flakes, black pepper, ginger, green onion, and salt in a bowl. Add the mahi mahi and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 1 hour.

Preheat the oven’s broiler and set the oven rack in the middle of the oven.

Bring the rice, water, chicken bouillon, and 1 tablespoon butter to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the liquid has been absorbed, about 20 minutes. Pour in the coconut milk and 2 tablespoons of sugar. Stir, and simmer uncovered until the rice has absorbed most of the coconut milk.

While the rice is cooking, remove the mahi mahi from the marinade, and shake off excess. Discard the remaining marinade. Place fish in a large baking dish in a single layer. Broil in the preheated oven until the fish flakes easily with a fork, 10 to 15 minutes. If the fish browns too quickly, cover the baking dish with a sheet of aluminum foil.

Melt 1 1/2 teaspoons butter and 1 1/2 tablespoons of sugar in a skillet over medium-high heat. When the mixture begins to bubble, stir in mango cubes. Cook and stir until mango is tender, about 5 minutes. Serve by placing a mahi mahi fillet over a scoop of hot rice and top with the mango salsa.

As for the sake you don't need to get fancy. I usually get Genbei san no Oni Koroshi (Honjozo) Demon Slayer

I don't normally eat a lot of pasta but I've been carbo loading the past few weeks so been working in different sauces so I don't get bored of it.

Did a spaghetinni with a putanesca sauce the other night. More or less leftover pizza ingredients.

can of garlic+basil pizza sauce, chopped anchovies, capers and garlic sautéed in butter. Deglaze with red wine vinegar and hot pimento paste then finish off with fresh basil and oregano. Mix in with pasta. So simple but comes out really good.
