I use some 20 bucks for a full set kind of knives, which tunred out great. Top quality knives are probably well worth it for professional cooks, but for your home, nah, as long as you keep them sharp, it won't relly make much of a difference.
Of course, when it comes to survivial, hunting knoves, etc. then it's probably worth shelling out some $$$ |

I have a mixed bag. Favorite has to be a Victorinox 8" Chef's knive. Nice and light. But I also like a Cutco 9 1/4 chefs knife, but its much heavier, It gets used for more for meat than anything though. Paring knives I usually get cheap because I sharpen a lot and go through them so quickly

My fave is my 8" Wusthof chef's knife. My backup is a 10" chef's knife from my Hamilton Beach knife block. It does the job as I keep it sharp, but it's heavy and poorly balanced for my hand. The Wusthof has a lovely handle and balance to it.

Carbon is not the problem, it makes up 0.041% of our atmosphere , 95% of that is from Volcanos and decomposing plants and stuff. So people in the US are responsible for 13% of the carbon in the atmosphere which 95% is not from Humans, like cars and trucks and stuff and they want to spend trillions to fix it while Solar Panel plants are powered by coal plants think about that |

Bought a set of "Miracle Blade" knives at Canadian Tire a few years ago. Best $29.95 I ever spent. I am 100% serious. The chef's knife is perfectly balanced for my big hands, the carving knife goes through a roast like warm butter, chopping knife and steak knives are all razor sharp, and all of them are as sharp today as they were when I bought them, none have neededed sharpening yet.
When other guys talk about their $300-$800 knives I just smile.

A good steel is generally all you'll need. If it gets worse than what the steel can handle get them professionally sharpened. I only use a stone on my cheap paring knives, since they are more severe

I have had my Cutco's for almost 20 year. I use them daily and they are still the best knives I have ever used. Have bought more of them over the years and have pretty much every option covered now.
