GFY Chef's. What knives are you using?

I just got a new set of Henckels, and am loving them. What is everyone using?

Same - They are nice but I need to sharpen them a lot - I am thinking about ceramics next time...

As they are new, I haven't sharpened them. But regardless of what brand I have, I always sharpen prior to using. Are you saying the Henckels dull faster?

Yeah - As I say they are nice - I just seem to struggle to keep them as sharp as they should be.....

I have MAC knives, they're quite good.

Antonio 07-05-2013 02:25 AM

I use some 20 bucks for a full set kind of knives, which tunred out great. Top quality knives are probably well worth it for professional cooks, but for your home, nah, as long as you keep them sharp, it won't relly make much of a difference.

Of course, when it comes to survivial, hunting knoves, etc. then it's probably worth shelling out some $$$

yeah, i use cheap ones for the most part. You have to sharpen any knife anyway so not a lot of difference if you have good hands anyway.

I will say that using pro knives is a bit easier though, they have some more weight to them and can definitely get things done quicker but as you said, if you only cook here and there at home they aren't normally worth the price. I'd spend the money on getting better stoves.

Rebel D 07-05-2013 07:05 AM

Depends what country the henkels are made. Some are just garbage!!.

good quality knives will last your whole life, cheap ones you will likely need to replace every few years...

"buy cheap, buy twice" :2 cents:

Dankasaur 07-05-2013 07:17 AM

I don't even know the name, I just grab a sharp knife. I've never been a picky chef.

OldJeff 07-05-2013 07:21 AM

Global, reasonable priced, light weight, sharpen easy, hold edge

fuzebox 07-05-2013 07:40 AM

I use a single Zwilling Henckels Professional S chef knife.

except I've had the same cheap ones for 12 years now..

apparently the engineering used in the expensive ones is overrated. How much you saving?

arock10 07-05-2013 08:20 AM

Henkels. Need to buy a second chefs knife

brassmonkey 07-05-2013 08:22 AM

wusthof :2 cents:

RebelR 07-05-2013 08:32 AM

I have a mixed bag. Favorite has to be a Victorinox 8" Chef's knive. Nice and light. But I also like a Cutco 9 1/4 chefs knife, but its much heavier, It gets used for more for meat than anything though. Paring knives I usually get cheap because I sharpen a lot and go through them so quickly

Elli 07-05-2013 10:32 AM

My fave is my 8" Wusthof chef's knife. My backup is a 10" chef's knife from my Hamilton Beach knife block. It does the job as I keep it sharp, but it's heavy and poorly balanced for my hand. The Wusthof has a lovely handle and balance to it.

Vendzilla 07-05-2013 10:34 AM

I use a sharp one

CDSmith 07-05-2013 01:44 PM

Bought a set of "Miracle Blade" knives at Canadian Tire a few years ago. Best $29.95 I ever spent. I am 100% serious. The chef's knife is perfectly balanced for my big hands, the carving knife goes through a roast like warm butter, chopping knife and steak knives are all razor sharp, and all of them are as sharp today as they were when I bought them, none have neededed sharpening yet.

When other guys talk about their $300-$800 knives I just smile.

GFY Chef's what's for dinner? I don't care what kind of knife you use to cook for me. I don't hate.

What is the best way to sharpen them at home?

candyflip 07-05-2013 02:45 PM

After owning a restaurant and kitchen, I won't use anything but Wüsthof. Henkels are nice too.

A good steel is generally all you'll need. If it gets worse than what the steel can handle get them professionally sharpened. I only use a stone on my cheap paring knives, since they are more severe

Wüsthof ?. as well.

I have had my Cutco's for almost 20 year. I use them daily and they are still the best knives I have ever used. Have bought more of them over the years and have pretty much every option covered now.

Tony Soundview 07-05-2013 08:21 PM

Cutco all the way!! I used to sell them door to door back in the day.

Best was I found was was a tool sharpening 2 grit oil stone from the hardware store (or, Amazon.com).

I lubricate it with running water under the sink faucet.

German rostfrei stainless steel I find the best.

I have got a 9" Chef German Kuchen CS Systeme I paid $8.00 for 15 years ago at a liquidations store, it has lasted forever and takes a fine edge -- so you don't have to pay $100.00. Sometimes, you just pay for the name ...

Wusthof Classic Hollow-Ground Santoku high-carbon stainless steel --looks nice
