I feel like the iron chef... really getting into this whole chinese food gig, even cooked my own Teriyaki Sauce...

On todays menu we have Special Chow Mein served with Salmon Teiyaki...

We start at 2am in the morning making my own Teriyaka Sauce !

Bubbling Along...

Lot's of Teriyake Sauce !...

Time to prepare the meat...

Sirlon Steak all sliced up... with my small asian cook knife !

Now time for the chicken...

Nice chunky slices...

In bags waiting to be marinated overnight !

Time to get it cooking, Salmon maranaided in Teriyaka for 14 hours, going in for a slow bake !

Prep the veg !

Marinated Chicken...

Chicken, Pork Lardons and Madagascan King Prawns...

Time to make it sizzle...

Add the Vegies !

Time to get the beef cooking !

Noodles time...

Nearly time to plate up !

There is soo many ideas on what makes a good Teriyaki... the short answer is there are 3 ingredients... Mirin, Soya Sauce, and Brown Sugar...

I think it's good to experiment... until you find what you really like, some people like it more salty (more Soya Sauce) some more sweet (more Mirin and Sugar)

I used Molasses which I think gave it a unique flavour... richer. I also added a little rice vinegar, a little ginger and a little honey... Some people say garlic, but I wasn't feeling it this time round lol...

I also added some cornflower in an attempt to make it a little thicker (stickier) but that didn't seem to work lol... I am so still learning...

I must admit I did make a boo boo... but it turned out ok. I used Bonito Soya Sauce, which I dont think is the usual... I believe Bonito as a fish flavour too it, and I was worried... but it tasted great...

So yeah the long answer I guess is to experiment, try different combinations till you get it right... well right as in how you like it lol.

Good Point... ok this was my fusion mix, of Chinese Chow Mein, with Japanese Teriyaki... now I can say I am a fusion chef...
