There is soo many ideas on what makes a good Teriyaki... the short answer is there are 3 ingredients... Mirin, Soya Sauce, and Brown Sugar...
I think it's good to experiment... until you find what you really like, some people like it more salty (more Soya Sauce) some more sweet (more Mirin and Sugar)
I used Molasses which I think gave it a unique flavour... richer. I also added a little rice vinegar, a little ginger and a little honey... Some people say garlic, but I wasn't feeling it this time round lol...
I also added some cornflower in an attempt to make it a little thicker (stickier) but that didn't seem to work lol... I am so still learning...
I must admit I did make a boo boo... but it turned out ok. I used Bonito Soya Sauce, which I dont think is the usual... I believe Bonito as a fish flavour too it, and I was worried... but it tasted great...
So yeah the long answer I guess is to experiment, try different combinations till you get it right... well right as in how you like it lol.
