all the dogs in the neighborhood are howling! got 4 boston butts going and a 20 lb turkey that i brined for 12 hours

turkey has about 5 hours to go and the butts will go for about 8 hours after that.

Droooolll, looks awesome. Ill be firing up the smoker later today myself. All of my friends and family loves my smoked turkey and ham on thanksgiving (and of course the Chorizo, Pork Tenderloin and Ribs arent bad too)

anyone know if brining for 24 hours is too much?

for about 12 lb turkey, i used about cup of kosher salt + 112 floz of veg broth.

Smokey Mountain/Great Outdoors - i have a 55 gallon drum wood burning smoker but i like the gas smoker and wood chips. using a combo of apple and pear today.

i love doing baby backs smoked with maple - fire them off on the grill at the end. take some pics and add em here!

24 hour brine could be a little much? I'll use about the same as you but with some brown sugar too and I'll put it in the brine tonight before bed and get it in the oven when I get up in the morning.

in my brine I've got brown sugar, allspice, peppercorn, crystallized ginger, kosher salt + water + veg broth.

I guess I'll put the turkey in the brine 7-8 pm tonite.

What does the brining do?

The brine basically draws out moisture in the meat while your brine solution penetrates back into it. So the meat stays more moist with more flavor. The brine has to be more salty than the natural moisture for it to work.

most are about the same. water, sugar, salt. you can add seasonings to taste. boil 1 gallon of water and add 1lb of kosher salt. add 1lb of sugar/honey/brown sugar.. let the salt/sugar disolve. add 2 quarts of vegetable stock. add the bird to a cooler and throw in a 7lb bag of ice.
