Any suggestions how to make THE PERFECT burger?

2 keys to making good burgers on the BBQ.. 1) get ground beef that actually has some fat in it. I usually use regular not lean or extra lean. 2) keep the bbq flame really low.. you dont want char burgers.. and the fat will cause flareups.. :)

Oh and almost forgot.. most important! Never press down on the burgers when they are cooking!

After Shock Media 06-18-2005 01:15 PM

I do know what you mean so no lectures on the difference between BBQ and grilling (which is what you will be doing).
Onto hamburgers.
Have the butcher ground up the following together or you can do it yourself which I suggest using a food processor, 3 batches in 10 pulses.
8 ounces chuck- trimmed.
8 ounces sirloin- trimmed.
Work in about 1/2 tsp salt (gently do not squish meat).
(add in nothing else)
Wet your hand and form into 5 ounce pattys (142 grams) about 3/4th inch thick.

Place on a very hot grill.
Medium rare - 4 minutes per side. (if you self ground only)
Medium - 5 minutes per side. (if you self ground only)
Well - 6-7 minutes per side.
Flip only once, and never press down on the meat.

Trust me you will not need any flavor enhancers in the burgers if you do it this way. They will taste very beefy, actually they taste perfect. I personally suggest them at medium, but again only if you self ground.

I grilled burgers last night...

1/4 ground 17% lean ground beef patties. (add salt, pepper, little garlic)
slices of american, cheddar, swiss (hehehe) or muenster cheese.
toasted buns
ketchup, mayo, mustard.
lettuce
tomatoe
onion (if you wish)
sliced avocado (mmmm)

Potatoe chips AND potatoe salad.

Beer.

Sly 06-18-2005 01:26 PM

There are like 2 Americans in this thread, haha.

I hate to burst your barbecue bubble, though hamburgers are a staple in my diet (had one for breakfast), they really don't make up an "American barbecue". They are usually included for the kids, yes, but a "real" barbecue will usually have chicken, ribs, steak, pork chops, bratwurst, and maybe fish or shrimp. Plenty of barbecue sauce and other seasonings. Sometimes there will be other foods like fresh grilled vegetables and salads, but often at my house we just do meat and beer.

Hamburgers are almost an everyday item here.

Hey how can I get some of that delicious meat from your dad you always talk about? Does he have a site to order from?

pornguy 06-18-2005 01:29 PM

American Bar-B-Q. Well first you have the catch the Americans. I sugguest that you remove the clothing before cooking. Some wear cheap clothing, and it makes the food taste funny!

Haha. To meal Real BBQ is either pork ribs, beef ribs, pork butt, beef brisket and well sometimes chicken. BBQ should take 4-12 hours to cook and be done low and slow over hardwood only. Everything else is ussually just grilling.
