Never heard of the Roughy is that white or red meat?

I am eating way less meat. Cut red meat and slowly cutting the chicken and veal.

I'll have to try it Baddog ;-)

Dover Sole: http://en.wikipedia.org/wiki/Microstomus_pacificus Really delicious and Tuna in all forms, especially tuna steaks.

I love salmon as well, unfortunately you often get served those high fat, low taste versions raised in fish farms.

I like shellfish much better, but for regular fish my favorites (in order) are:

Salmon, Halibut, Trout, Catfish, Tuna.

I dont really care for the others like Snapper or Orange Roughy, and I cant stand Shark.

Chiliean sea bass is neither from Chili nor a bass

http://www.state.gov/g/oes/rls/fs/2002/8989.htm

I love all fish - all depends on the preparation, IMO. There's a sea bass an Asian restaurant in the burbs cooks that has been knocking my socks off for well over 10 years. It's not cheap, but SOOOOO good.

Shark is really good if you can find a place that knows how to cook it. Same with gator tail.

I like both salt and fresh water bass, as well as flounder. Salmon is great, and white fish is pretty good. and there are just so many.

For those of you cutting out the red meat, and eating more fish, DONT use to much butter.

Tuna. No Question.

Just give me some wasabi, soy sauce, gari (pickled ginger), maybe some rice, a knife and a fresh tuna fish...

(no heat required)

and I'll never go hungry.

Tuna and Salmon for sure...but my far and away favorite is striped bass. Anybody ever eat any? There is nothing like grabbing some off the coast of Montauk or even in the fresh water lakes they were stocked like Lake Lanier in Georgia...a little mango chutney or cilantro, olive oil and garlic.

Damn I'm hungry... ~off to the kitchen~

Salmon and Tuna. When it comes to Tuna, I like "Toro" which is cut from the fatty belly area of the fish and harvested during the colder seasons. Fat = more oils and hence a more pronounced flavor.

sturgeon is only good if the cook knows what he's doing... best i've ever had is from the caspian, grilled on wood fire with safron + lemon marinade

by a wide margin i would have to say chilean sea bass, and it is best oscar style.

my other top choices are tuna steaks, swordfish, and salmon.

i think next to filet mignon, almost every type of seasfood would be my favorite food ;)
