What's it take to run dual monitors? I've got an extra video card can I just throw that it in the box and be good to go?

Not quite that simple. It takes special software configuration as well.
I'd suggest you go by a dual monitor card and take it from there.  |

most new video cards have two ports... just plug them in and you should be good to go.
