Anyone know a good recipe for Sweet Potatos and Marshmallows...
I was invited to a Thanksgiving dinner with my girlfriend's family and they asked me if I would cook a dish for the dinner. I volunteered to cook the Sweet Potato and Marshmallow dish, but I really have no clue how to make it.

Here is my favorite... just throw some marshmallows (the tiny ones) in when baking or cover the top with them. that makes a nice crust on top....

Yum. My favorite part are the marshmellows. I like when they are burnt a little on the top!

Just pick some up at Boston Market, they make the best. Here's what someone says is their recipe. Will serve 10:
Ingredients: 7 1/2 large sweet potatoes 2 1/2 cups sugar 5 eggs 2 1/2 stick butter, softened 2 1/2 teaspoons vanilla extract ***Crunch Topping*** 0.833 cup melted butter 0.833 cup flour 2 1/2 cups brown sugar 2 1/2 cups chopped pecans 2 1/2 tablespoons cinnamon Directions: Boil potatoes until tender. Remove skins when cooled. Put into a large bowl and whip them until fluffy. Add remaining ingredients. Pour into a greased casserole and top with the Crunch Topping. Bake at 350°F for 45 minutes. http://www.cdkitchen.com/recipes/rec...ole38223.shtml |
