When I first started showing off my new system I would usually break out the big gun fight in the Matrix and the opening scene of Saving Private Ryan. I also had a home theatre setup disc which had a THX demo. The opening to Lord of the Rings wasn't bad. Since then I've moved and haven't properly setup my system again.

When I'm showing off my 43" Pioneer Plasma, B&K receiver, Denon 2910 DVD Player, Vienna Accoustic speakers, and Carver "true sub" subwoofer (shakes the entire neighborhood) I put in the following:

Air Force One - Scene where they dispatch the fighters to intercept Air Force One. When the fighters circle Air Force One the sound of the jets moves from left to right in the surrounds. Deafening.

Gladiator - Opening Battle Scene

Blade - Opening scene in the warehouse where the vamps are partying and decide the feast on the loser "human". Then Blade comes in and kicks some ass.

Castaway - the airplane crash scene - you won't fly again.

Up In Smoke Concert (live in Boston) - (Ice Cube, Dr. Dre, Eminem, Xzibit, Snoop Dogg) - The best hip-hop DVD concert of all time and one of the best concert DVDs out there.
