Other reasons.

You will already have chips for the salsa.
You will already need chip containers - dual use for the nachos.
Burritos take 2-3 min in microwave, nachos are just pile on chips then push cheese squirter (20-30 seconds).
Burritos may require freezer space, nachos do not.
Nacho's have more options that are still cheap - chili etc. All usable in the pump machines.
Unit price of nacho's are much less than burritos and have greater markup.
People will actually eat nacho's.

Beer, Salsa's, taquito's (again costco), guacamole (costco carries it, frozen area), churro's (needs own heating machine), frozen drinks if you can (some places carry pre mixed packs alcohol included).

Counter top convection oven (15 min) or deep fryer (3 minutes). Though I would suggest they be cooked via convection oven then maybe kept in a warm bin like suggested as deep fat frying is tedious and messy.

Oh costco also has jalapeno poppers, again cooks well in convection oven.
They also have spicy chicken wings in the frozen section, technically not mexican but eh who care's you were going to do frozen burritos.
