When a 'che' is at the END of a word it's usually pronounced "sh". For instance mustache.

When a 'che' is at the BEGINNING of a word it's usually prounounced "ch' as in chestnut.

When a 'tch' is at the END of a word it's usually pronounced 'ch' as in pitch.

It's niche, not nitch, so it would be pronounced NEESH, if spoken 'correctly'.

It's not the case in avalanche and psyche. Remember 'Y' is sometimes a vowel (a,e,i,o,u, and sometimes y). In this case I don't think the 'y' is considered a voewel. Nor is N a vowel. And that's why they're pronounced differently. Psyche sounds like Sike and Avalanche sounds like avalanch.

Yep everything you said here is correct. But colour and color are more interchangeable and not as much of a gaffe as substituting "nitch" for "neesh" because the letter 'U' in both cases follows from a consinent and is therefore not pronounced.

For instance in camouflage, you don't hear the 'U' because it follows the letter 'O'. It's camoflage, not camUflage even though there is a U in it.
