A nice filet mignon is great every once in a while

Just made one of these, their great, from omaha steaks. 8 oz filet mignon. Fucking sucks, I'm in the process of flipping the steak, and some chick interrupts me, and I go to pick up the cast iron skillet, and forgot that I had the glove off, and I grab the cast iron skillet with my bare hand. That fucker just got out of a oven that was over 500 degrees right before I started cooking! Tip for anybody, searing a steak is better than BBQ atleast for filet mignons!

It's my roommates pan, so I don't know what he's washed it with, but I know all I wash it with is water! Plus it had some olive oil on it

Yeah, that would be wasting good meat. It's much harder to get that tenderness so the meat melts on you tounge with a grill.

Yes it is! You just can't get it the same as searing it. And it's not like I just went out and bought a $4.00 steak at the supermarket, where it doesn't really fucking matter!

You should try cooking game. Deer fillet is one of my favorites. There are so many more flavours with game.

I wanna get some Lamb, that's so fucking good, just haven't found a good enough place to get it around my area yet. The place I get my steaks only usually have it during the holidays, but I could order it directly from omaha. Haven't tried Deer yet, that'll be next on my list!

Not so fond of lamb, many people like it thou. Remember that if you try roe deer, you need a good sauce cause the meat isn't as juicy as beef.

I like filet mignon every once in a while as well, the consistency is a bit too smooth and soft to eat all the time.

Most of the time I actually prefer a ribeye.

Steaks are the bomb and yours is cooked to a perfect temp! One thing that bothers me is why in the world would you cook a tender filet like that on a frying pan???? Those babies need to be grilled to perfection instead of frying it.

I do like some steaks cooked Pittsburgh Rare and they're cooked on a red hot skillet!

Sure. It's pretty simple. I take get the steak seasoned how you want. Usually I'll put a little Olive Oil on each side of the steak, brushed or rubbed in, then put the seasoning on.

Then put the cast iron skillet into the oven, and get the oven to 500 degrees, and I'll leave the skillet in there for a while to get nice and very hot, and this gives time to let the seasoning flavor get into the steak.

Then once the skillet is hot, bring it out like I did just put it on the oven door and put a little Olive Oil on the skillet. Then place the steak on the skillet, let it cook on that side for about 2-3 minutes, the less the time, the more rare it is. WHich I put it on for about 2 mins. Then flip it over and sear the other side for about two minutes, after both sides are sear'd, I put it in the oven for about 5 minutes, for a rare steak. But for medium leave it in for another min or 2.

Now this is for a 8 oz filet mignon. I don't know the timing on a 12 oz one. I believe it's a min or 2 longer on each side and then a few extra in the oven.

But this the only way I eat my steak!

For a mignon, med-well is too much, it takes away the tenderness & some of the taste! Med-rare is the highest I go, but mostly try to get rare!
