Sure. It's pretty simple. I take get the steak seasoned how you want. Usually I'll put a little Olive Oil on each side of the steak, brushed or rubbed in, then put the seasoning on.
Then put the cast iron skillet into the oven, and get the oven to 500 degrees, and I'll leave the skillet in there for a while to get nice and very hot, and this gives time to let the seasoning flavor get into the steak.
Then once the skillet is hot, bring it out like I did just put it on the oven door and put a little Olive Oil on the skillet. Then place the steak on the skillet, let it cook on that side for about 2-3 minutes, the less the time, the more rare it is. WHich I put it on for about 2 mins. Then flip it over and sear the other side for about two minutes, after both sides are sear'd, I put it in the oven for about 5 minutes, for a rare steak. But for medium leave it in for another min or 2.
Now this is for a 8 oz filet mignon. I don't know the timing on a 12 oz one. I believe it's a min or 2 longer on each side and then a few extra in the oven.
But this the only way I eat my steak!
