changing code in a whole file
is there a program out there that lets me go in and change a piece of html in 1 step instead of having to open and edit over 100 files?

I would use sed, the stream editor. Search on google and you'll find good examples. You can acomplish the same thing in perl, if you'd rather do it that way.
