When I was in the restaurant business we won all the chargeback fights. It was easy, just dig out the signed reciept and send it to the bank.

NO.
Even with a UPS signature and emails from the guy that our stuff was great. Bank has no interest to defend you if you do not have a signature.

If you can get the reason off of the no signature you have a shot. I did phone sales and we won a few where they claimed no delivery of goods but that is it.
