I'm veggie not vegan, but I mainly cook vegan at home. When ever we have people over they are shocked at how yummy vegan food can be, usually followed by the "I would have never thought this was vegan"

why do vegans add tofu to everything? that shit isn't right for a number of reasons. I can easily do a good vegetarian lasagne that maintains its traditional taste but zucchinni and eggplant are far better textures... plus i'd be using real cheese heh

I did. It's not for me. Veganism, imo, is more a political statement and lifestyle choice rather than a nutrition choice. And that's cool for people to make that decision and I respect it, but I run a pretty tight ship nutritionally and don't see any need to make the massive sacrifice, both in the fridge and socially.

i use Tofutti cream cheese. and its just as good as the regular kind. For the cheese Daiya Shreds, Mozzarella. Its the only vegan cheese I have worked with that taste great, and melts.

I rarely cook with tofu, yet this recipe calls for it in one of the fillings, the filling turns out very nice.

My favorite part about this recipe is not having to cook the noodles prior.

True. Vegan I couldn't do 100% of the time. My boyfriend is vegan, which is why the food we make at home is generally 100% vegan.

I was a vegetarian for 5 years when I was younger. I love dairy products such as milk and cheese (even though I had allergic reactions to milk as a child, and have other related allergies related to animal products).

Vegetarian/vegan cuisine seems to be growing, as I notice more veggie restaurants opening in the area.

Most grocery stores now carry products oriented towards vegetarians. Even Costco has a good selection of vegetarian products too:
