How do I adjust what page it sends the buyer after payment is made?

It can be set to a different URL for each item. Edit the "Product Return URL" field.

theres an area in the setup section where you can define a global url OR set individual return pages for each product.

If you use database postback that also the url parameters
are passed back to..

Product return urls overrule the global return url.
