If you have to pay for hosting they have a way to know who you are, unless you are paying them somehow in cash in an envelope or something.
Same goes for your domain I would think.

Know, wether they respect their customers´ right to privacy is a whole different deal. If I am the webmaster of a political site in a country that has a government that doesn´t like criticism (i.e: china,cuba) and they give up your info,they suck. If you are hosting CP and they refuse to cooperate they are scum as well as criminals.
