      California rolls are NOT sushi, fucking retards.

      California rolls are rice, Cucumbers and sprinkled with sesame seeds.

                            However, it does not always have to be fish. Other sea critters (not fish) are often found on sushi. Even cooked eggs (fried and folded somewhat like an omelet), called tamago sushi, is a type of sushi.

                            Rolled sushi is actually referred to as maki. Thus, tuna (maguro) placed in the center and rolled into the rice, with a wrap of dried seaweed (nori), is referred to as tekka-maki, not maguro sushi.

                            A maki with cucumber in the center is kappa-maki, not California roll (aka California maki or cal-maki).

                            What primarily differentiates California roll from other rolled sushi is crab meat (often artificial crab meat) and avocado (plus cucumber), and that the sushi rice is on the outside (as opposed to being wrapped with a strip of nori around it).

                            I think one reason California roll is so popular among people new to sushi is for it's mildness. For many, eating raw fish is an acquired taste, however once you have developed the taste for it, you are hooked.

                            The worst thing I have noted about eating sushi in America is that a lot of chefs are not professionally trained, and almost treat the rice as an after-thought. This is particularly true in non-Japanese establishments (Korean/Vietnamese run sushi bars), and in places that cater to tourists with gimicks like sushi boats (although not always).

                            In Japan, it can take years of apprenticeship to become a full-fledged sushi chef.

                            Anyway, I'm off to my local sushi bar for lunch...
