DEFCON's Wall Of Sheep and Wireless Security

I watched some old DEFCON footage where they had a sign that showed sniffed wireless traffic. They called it the Wall of Sheep.

What can you do? Secure Shell? What do you use to avoid getting your wireless traffic sniffed?
