I made coconut rice and have extra coconut milk leftover. I really don't like throwing away food? Anyone have a good, basic recipe to use coconut milk with? Also, any clue how long it will still be good in the refrigerator?

Add curry paste, little soy or fish sauce, green / red peppers, onions & chicken / pork / tofu = awesome coconut curry dish. Edit: and that French toast for dessert.

+ pineapple juice + soda water = nice drink. About 1:2:2 ratio is good for me.

Keeps for a long time in the fridge of not contaminated and sealed.

coconut rice pudding, curry, i know a few people that were using it like a whip cream...those that wanted to stay way from dairy and such. My roommate made ice cream out of it...it was the milk, some sugar, and vanilla I believe....it wasn't bad but it definitely smelt like you were eating sun tan lotion. lol
