    Chili recipes...

    I'm just making mine, and I love to try variations. What's your secret ingredient?

    1 x onion
    4 x garlic
    a variety of fresh and dried chilies according to what you like and what you have, I am growing 12 different types this year and used 5 different ones in this)
    mince beef
    tomatoes (I used fresh from the garden, but tinned is fine)
    squirt of tomato puree
    chipotle paste
    beer
    worcestershire sauce

    spices: cumin, paprika, cayenne pepper, cinnamon

    method

    fry onion, garlic, chillies and spices until onion is transparent in a little oil
    remove from pan
    brown mince, add worcestershire sauce and some salt and pepper
    add a pint of real ale, I like an IPA
    cook slowly until beer is all gone
    add back in the onions and shit
    add toms, tom puree, a little salt and pepper and a touch of sugar
    simmer on a low heat for at least 4 hours, stirring every 30 mins or so to stop it sticking to the bottom

    It tastes exactly the restaurants...(I know you prolly haven't had it but their chili is awesome)

        Mmm, that sounds awesome.

        Oh and I totally forgot the kidney beans in my recipe, obviously.

        (Although my research says authentic Texan chili doesn't use beans)

          Ingredients:
          2lbs lean ground beef
          1 serrano pepper
          1 14oz can of beef broth
          4 oz of tomato sauce
          2 1/2 cups of water
          1 teaspoon of cayenne pepper
          2 tablespoons of onion powder
          2 tablespoons of paprika
          1 tablespoon of cumin powder
          5 tablespoons of chili powder
          1 jar (8 oz) of Huy Fong Chili Garlic Sauce

          To Make Pepper Juice:
          Chop the pepper and boil it in a couple of ounces of water. Strain and set aside.

          Directions:
          Brown ground beef in a large skillet or pot. Drain if necessary. While the meat is cooking, make the pepper juice. Once the meat is browned, add cayenne pepper, onion powder, paprika, beef broth, pepper juice, tomato sauce and water. Cook over medium heat for 1 hour.

          Add chili powder, cumin and Huy Fong Chili Garlic Sauce. Cook an additional 15 minutes over medium heat. Serve ho

            1 lb. ground beef
            1 large onion chopped
            3 cloves of garlic, minced
            Mixture of hot peppers, diced
            1 16 oz. can kidney beans
            1 29 oz. can whole tomatoes, chopped
            4 oz. tomato sauce
            1 c. water
            1 tbsp. chili powder
            Salt & Pepper
            3/4 tsp. dried cumin
            1/2 tsp. dried oregano
            1/2 tsp. crushed red pepper
            Tobasco sauce

            Although I use fresh tomatoes and such.

              i make all kinds of variations.. i tried the true texan style recently.. it's pretty minimalist though with roughly ground beef, jalepenos and tomato paste. Dam good however.

              My favourite variation is what i call portuguese style. I'll make it with chuck beef chunks, chorico (portuguese sausage) and large fava beans instead of kidney.


              only kinds i don't like is cincinatti style... over spaghetti... cinnamon?.. cloves? yeah can't do it...

                I'm going to try this one. Wendy's chili is the best, especially when it is freshly made.

                  Pumpkin Pie Chili

                  2 pounds ground beef
                  1 large onion, diced
                  1 green bell pepper, diced
                  2 (15 ounce) cans kidney beans, drained
                  1 (46 fluid ounce) can tomato juice
                  1 (28 ounce) can peeled and diced tomatoes with juice
                  1/2 cup canned pumpkin pie puree
                  1 tablespoon pumpkin pie spice
                  1 tablespoon chili powder
                  1/4 cup white sugar

                  Directions

                  In a large pot over medium heat, cook beef until brown; drain. Stir in onion and bell pepper and cook 5 minutes. Stir in beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder and sugar. Simmer 1 hour.

                    Big Bowl O Chile O Lo

                    Minimalist, very meaty and fairly mild.

                    Brown 4-5 LBs extra lean ground beef with 6 LBs stew meat, allow to sit 1/2 hour to cool, drain.

                    Per 10-11 LBs total meat used:

                    While browning, mix up Spice Mix in bowl first and set aside:

                    2 T salt
                    6 T chile powder
                    1 t cumen
                    1 t onion powder
                    1 t garlic powder
                    1 t celery or seasoning salt
                    1/2 t red pepper
                    1/2 t black pepper

                    Add to drained beef:

                    1/2 cup canola oil
                    (1) 28 oz can whole tomatoes (no skins, if fresh tomatoes)
                    (1) 28 oz can diced tomatoes (no skins, if fresh tomatoes)
                    (1) 28 oz can tomato sauce
                    (1) 28oz can water

                    5 LBs roughly diced Yellow Onions (size of a quarter or bigger)
                    Spice mix from above

                    Heat to boiling and simmer at least 1 hour.

                    Last 15 mins add:

                    6 cans Kidney (or fav) beans

                    Nothing but beef, onions, tomatoes, kidney beans and spice.

                    Enjoy! You have about 3 gallons of good meaty Chile Freeze most of course. Is still excellent 6 months later out of the freezer.

                            Yeah that'd be good. Add just a tinch of sugar too which is prob good. I do add sugar to my Taco Seas Mix which I posted somewhere on gfy.

                            Some good recipes on this page I'd like to try them all. Adj the spice strength as needed but all look good.

                              I grow peppino chile pepper, soak them for 2hrs in vodka and then stuff them with mozzarella , anchovy and capers. 2 hours later I might also accidentally rub my eyes, that is even more fun. not.

                                It's got pretty shitty around here. My wife got it a few weeks ago while we were out and it was more of a soup than chilli.

                                Anyway, I'm looking for a new recipe as mine hasn't been up to par so this will work out good. Give me something to do this weekend.

                                    I usually get some stew meat or that little cube shit, but I made some about 4 days ago with ground beef. What i did though is only barely thaw it it from frozen. just enough to cut through easily. i cubed it like that. seasoned the hell out of it and seared all sides. Then threw it in the crock pot with my chili goods and it came out later like little steak chunks. all tasty n shit.

                                    Same general recipe. I use kidney black and regular ... pinto ?

                                    usually throw some beer in but didnt have any this time.

                                    all about spices though. chili powder, cumin, small oregano, paprika, chipotle, didnt have corriander. salt black and white pepper.

                                    usually i do habanero and 3 jalapeno but just did the one habanero this time cause one person here is a sissy.

                                    ended up being really spicey but once we added sour cream and cheese to our owls it evened right out. Cornbread too obviously.

                                        hey Deej, what happened with your illustrated cooking lessons? I tried the one with the bacon as a basket and did a mess but really enjoyed them
