Who's BBQing today? Lets see it.
 
Wife got a smoker for our 1 year anni last week. So what better time then to use it today?

Last nights boston butt after a dry rub marinade... Threw this on the smoker at midnight.

9 Hours later.. at 148F... that black is called Bark. And yes its suppose to look like that.

Couple hours till its done, while refueling I'm using a 50/50 mixture of apple cider vinegar and jack D sprayed over the butt. Moisture pan is mostly apple cider vinegar and some water. Mixture of Hickory and Mesq wood chips.

Its known as bark, it burns on the outside and its a very thin layer and has a lot of flavor since a lot of smoke captures in it. Normally you mix parts of it in while you start pulling the pork apart. Hence pulled pork was born.

I BBQ'd yesterday. Didn't take any pics, but smoked 2 racks of baby backs. I make my own rub, and my own maple bbq sauce.

its not "bbq" per say its smoking. Go to the south and you'll find this all over :) Vinegar based bbq sauce etc.

I have a beef brisket(with Mesquite wood) and ribs(with apple wood) in the smokers. Beer is on ice and the booze is in the freezer. Plan on grilling steaks, chicken, and jumbo shrimp

Mostly in North Carolina they BBQ like this. Is that where you're at?

We're doing BBQ today as well. Dueling charcoal grills with a little bit of hickory thrown on. On one, my other half will be doing ribs and real burgers, on the other I'll be doing veggie-dogs and veggie- burgers.

Ribs take the longest, veggie stuff cooks up real quick so I've got it easy for sure. For other non meat eaters I'm doing SmartDogs and Franklin Farms Fresh Portabella Burgers.

The BEST fake burgers are made by Worthington-

BBQing is cooking slowly over a low heat and is typically the tougher cuts of meat and is usually done over wood or charcoal. But can be done on gas

Grilling is fast cooking over high heat

Been meaning to try a maple syrup based sauce... I can't stop making the rum based sauce I came up with though, it's so damn good.

Maybe next week I'll pick up a jug of pure maple syrup and give it a try.

I never liked the taste of red meat as a kid, so for me when I have a veggie dog its everything I like about a hot dog minus the thing I don't.

Personally, when I do most of my cooking, instead of using an over the counter product as a meat simulator (they are mostly just fillers anyway) I just make good cooking using ingredients other than meat. I will be making a few things also today, like grilled corn on the cob and such, but really today is for my friends who miss having a juicy burger on a hot summer afternoon, so veggie burgs it is.

I guess its kind of like diabetics eating sugar free candy. Sometimes you just miss certain things you force yourself to abstain from. :2 cents:

I just had some burgers and hot dogs on the grill earlier after doing some yard work. Nothing fancy enough to take pictures of.

Didn't take any pics of the food but we had an egret begging for scraps at ours this afternoon, would only eat meat. The thing was crazy, even tried to come in the house w/ me at one point. I snapped some pics. Will try to upload tomorrow.
