It is a very tasty food.

I recently had the one and only quesadilla I've ever had with more than just cheese in it - from Fresh MXN Food (formerly Santana's...stupidest name change ever?) and it was just fucking awful. I LOVE cheese-only quesadillas though. Salazar's here has the best ones...I could eat 50 of them.

Done right they are beautiful.

Yummy. Just a shame it's so difficult to find the right cheese. Queso Oaxaca is the best for it. Cheddar and/or mozzarella don't do quesadillas justice.

I'll take two...

I do mine with Oaxaca cheese, grilled shrimp (marinated in lime juice, black pepper, minced garlic and crushed arbol chiles), grilled pineapple and blackened serranos.

never tried with pineapple or blackened serranos , but everything else basically.

cheese and marinated grilled shrimp, i use mojo marinade, i think its for chicken but really good with shrimp and many other things.

its a traditional cuban marinade from what i am reading. didn't know that.

"Mojo is a pungent Latin marinating sauce made of onion, garlic, cumin, oregano, salt, black pepper, orange and lemon juice."
