What's your go-to healthy meal(s) prepared AT HOME???
 
I never eat completely free of taste--I season my food to make it taste better, so I'm not too hardcore. But in the vein of tasting good and overall very healthy, here are some of the most frequent for me:


~ Chicken breast, pan seared in olive oil, salt & pepper, lemon juice and various herbs. Side of Asparagus or broccoli. (I just finished this w/ asparagus 5 mins ago, hence the thread)

~ Salmon, tuna or other omega-3 rich fish with above vegetables. +Old Bay.:thumbsup

~ Tuna out of a can (rinsed in water) with barbeque sauce on top and *brown* rice on the side.

~ Oatmeal with with salt and just a touch (.5 tsp) of brown sugar to make it go down easier. ;)

~ Sliced turkey breast on 100% whole wheat bread with whole grain mustard.

If I need what I call a "clean Day" I'll do a can of tuna, mixed in with white rice and a can of corn, add some salt. It sounds boring but it's actually pretty good and makes me feel really good afterwards.

curried carrot soup made with onions and garlic. pured in a blender and lemon added afterwards. hardly any calories and gets your vegetables in! =)

Usually I have some poached chicken ready to go.
Throw a few breasts in a pot covered with water and some smashed cloves of garlic and poach them.
Store in the fridge with the poaching liquid to add to sandwiches, salads, start a soup or whatever. Simple and handy.

salmon patties- pink/red salmon mix + egg whites, onions, pepper, crushed whole wheat crackers to make it all stick together then saute'd in olive oil. + salad and my homemade jalepeno dressing. i also leave the bones and skin in.

oatmeal with protein powder mixed in

peanut butter+ banana


3 eggwhites/1 yolk scrambled with various bell peppers and fresh parmesan


i stay away from bread, pasta, rice, etc.

How long do you poach them in water? Is the water boiling or simmering?

Poaching liquid to sandwiches? Please explain. Doesn't that make your sandwiches soggy?

I am the same with the chicken breast and broccoli. I cook them on my George Foreman grill. I will usually throw in a little bit of mushrooms :-) I will also maybe have some salmon and an egg. Lately, I've been enjoying organic salad too without salad dressing and just eating it alone. It tastes delicious without any of the added stuff.

That's an interesting one to congeal with the egg whites. Here's where I would put in a yolk to be sure. But I might have to try this one.:thumbsup

I barely cover with water, and heat it on high until it's almost boiling, then back it way down to low or medium low heat, just a bubble. Simmering that way for 5 minutes or so, then turn off the heat and let it sit. I use a meat thermometer to be sure, but it takes about 20 to 30 minutes longer and they are fully cooked to safe temperature.

I skim off any scum/foam and discard, and then save the meat and poaching liquid in a plastic container. The liquid is flavorful, so I use it in soup for the most part, or add to rice or plain noodles to add flavor.

Lasts about a week in the fridge, maybe longer

That's pretty much my diet on non-cheat days; salmon, tuna, tuna steaks, chicken breasts, oatmeal and broccoli.

For a protein/fat meal with no carbs you can try canned tuna with shredded swiss cheese, diced onions, green peppers and tomatoes.

Oh, and I almost forgot about sweet potatoes! They go good with turkey too.

George Foreman Grill is really helpful when you're trying to eat well.

Top it with McCormick's chicken rub and you've got some nice tasting chicken. Add that to brown rice and some steamed broccoli, and it's delicious.

Mornings would be Irish steel cut oatmeal with some sliced banana and a sprinkle of cinnamon, and maybe a little splash of soy milk.

Eating healthy is easy if you plan it out.

tuna (albacore preferred) and peas (must be frozen, no canned) is one of my power meals.

Will pull you out of nutritional deprivation and get ya feeling ok again.

Peas are the highest vits/mins of all veg overall. look em up.

And thanks to our good friends in Mexico, they are like $2.00 for 24-32 oz (2 LBs) if you buy the store or generic brand which are just as good.

Absolutely the best food value overall in the Supermarket.

And Smart Balance (orig) on those peas :thumbsup A little butter is ok if preferred. No margerine!

Another and the easiest, cheapest and best for your time..

Get a bag of Minn or Idaho Reds (I prefer Minnesota reds :) and
Yukon Golds from Alaska, and if desired a bag of straight Idaho bakers (russets)

Take 4-5 of each kind, give em a quick scrub. poke and bake. Like 3 mins of your time, no dishes.

Is there anything better in the winter than pulling out a dozen beautiful baked potatoes. They start to smell so good.

from the time you turn on the oven to 375..

small 45 mins
avg 50
large 55
jumbo 60

perfect every time.

Leave em on the stove top at least an hour and admire your work and how easy that was. :) Place in bowl and in fridge. For at least 10 days you got fresh taters for all types. Easiest: Slice length wise 8 times, get some ketchup and or mustard or whatever, micro and go. No fat deal.

Of course you dont peel anything that is the time saver. No need to anyhow. Vites are in the skin. :)

One more that is great stuff for the money.

Stop buying the commercial sliced bread even if "whole wheat" one time and get a fresh baked loaf of "100% whole wheat" bread at the deli section in the supermarket. They are typically about $4.50 a loaf but also have typically 12 grain and a good oil made with. It's way better.

Cut it with a bread knife about 5/8" - 3/4" as wide as your toaster will take and toast always, it will take all the toaster time cause it's so dense.

But I tell you once you taste it that glutenated garb the commercial bread makers are giving you will be history. It is like manna from above. So healthy. Plus it keeps up to a month in the fridge. It doesn't get stale. Air tight of course.

You'll feel that 100% whole wheat rushing into you and raising the blood sugar the right way. And it's cheap. It will take you a while to get thru that dense bad boy.

I like Smart Balance but that doesn't matter. But on a 3/4" piece you need a big chunk of spread plus it's whole wheat. I've gone up to 1/4 cup. 4 Tablespoons. Which is more fun too. :) It's a quick meal.

Absolutely! This is great advice. Whole wheat bread hardly means anything. It's the 100% whole wheat classification that really makes a difference in your nutritional intake when consuming bread.:thumbsup

i've switched to ezekiel (low gi) bread whenever i eat bread- even better than whole wheat, they sell it at safeway/von's
